PEACH COBBLER EGGROLLS
Filling:
1 can peaches in heavy syrup
1/2 cup granulated sugar
2-3 tbsp of butter
2 tsp of vanilla
1-2 tsp of nutmeg
Egg roll wrappers
Cooking oil of your choice
1/2 cup sugar mixed with 2 TBSP cinnamon
Sauce:
1/3 cup confectioners sugar
2 tbsp corn starch
Empty can of peaches, including syrup into pot.
Bring to medium high heat. Add granulated sugar,
butter, vanilla, & nutmeg. Stir & cook approximately
10 minutes, until peaches are softened. Turn off
heat. Remove peaches, leaving syrup in pot. Begin
to fill egg roll wrappers (do not overfill). Heat oil in
fry each egg roll approximately 1-2 minutes on each
side until browned. Once done, remove from oil,
place on paper towels to drain grease. Roll in
cinnamon/sugar mixture to coat while still hot. Place
pot with syrup back on heat. Add confectioners
sugar and cornstarch, bring to boil while stirring.
Once slightly thickened, reduce heat to simmer.
Simmer 2-3 minutes and remove from heat. Add
sauce to egg rolls as you desire.
